What makes Pasilla de Oaxaca peppers special?

Pasilla de Oaxaca peppers are smoked chili peppers that are allowed to ripen on the vine, hand harvested and smoked with fruitwood. From the Oaxaca region of Mexico, these peppers are known for their rich, complex flavor profile.

Recipe:

  1. Soak 7-10 wooden skewers in water for at least 30 minutes
  2. Cut chicken thighs into about 1 inch cubes - try to keep all pieces around the same size for consistent cooking. Put 5-6 pieces on each skewer.
  3. Whisk olive oil, lemon juice, Pasilla de Oaxaca Infused Honey, lemon zest, garlic, and salt/pepper. Put chicken in a glass dish and pour mixture over to marinate overnight. 
  4. Preheat the grill to the highest setting. Cook the chicken on the grill for 5 minutes per side, or until the chicken easily flips. Grill until the internal temperature reaches 165 degrees F. 
  5. Let the chicken rest for 10 minutes before serving. Drizzle with Pasilla de Oaxaca Infused Honey and serve with limes.
